Our olive oil is extracted with the traditional method of first cold pressing, with granite millstones and hydraulic presses, in a beautifil recently-built plant which blends well with the surrounding landscape. Guests can also enjoy more than 2,000 square meters of green areas dotted with ancient olive trees. Our proposal includes a guided tour of the Oil Mill with speaker (in Italian, English or French): - How olive oil is born: detailed description of all stages production process, from the fruit to the oil, using the traditional method of first cold pressing. Comparison with other extraction methods; - How a very high quality olive oil is born: description of methods adopted in the various stages of production and the storage process, which directly affect the quality of olive oil. This culminated in him becoming a personal chef and having the pleasure to cook for the rich and famous. He has traveled around the world teaching Italian cuisine.
In this immersive course, held in Perugia, one of Italy's iconic chocolate cities, we will explore the fascinating world of artisan chocolate, starting from the basics of processing to advanced tempering and decorating techniques.
